The “Weight Loss” Pumpkin Roll, Protein Packed with Half the Sugar

TITLE: The “Weight Loss” Pumpkin Roll — No Towel, No Crack, Half the Sugar

The most feared dessert in America — not because of the calories, because it CRACKS. I’d never rolled a cake in my life, did it with zero practice runs, and it came out clean — because the method does the work: no towel, just the parchment it bakes on. ~160 calories a slice with double the protein of the classic, and the filling is a soft, spoonable cream instead of a stick and a half of butter.

🎃 FULL RECIPE — “WEIGHT LOSS” PUMPKIN ROLL (one 15×10 roll, 10 slices)

The Sponge
– 4 large eggs, room temperature
– ½ cup allulose + 2½ tbsp Swerve granular (= ⅔ cup sweetener total; all allulose works the same)
– 2 tbsp real sugar
– ⅔ cup canned pumpkin purée (NOT pumpkin pie filling)
– 1 tsp vanilla extract
– ½ cup + 2 tbsp all-purpose flour
– 2 tbsp cornstarch
– 1 tsp baking powder
– 2½ tsp pumpkin pie spice + ½ tsp extra cinnamon — looks like a lot; timid spice is why homemade rolls taste flat
– ¼ tsp fine salt

The Filling
– 6 oz ⅓-less-fat cream cheese (Neufchâtel), room temperature
– ¾ cup plain nonfat Greek yogurt
– 1 scoop vanilla whey protein
– ½ cup powdered Swerve, plus more for dusting
– 1 tsp vanilla extract + pinch of salt
(This filling sets SOFT and luscious, not stiff — that’s the no-butter trade and it’s worth it. Want it classic-firm? Beat in ¼ tsp xanthan gum — zero calories, sets it like the butter would.)

Steps
1. Oven to 375°F. Grease a 15×10 jelly roll pan, line it with parchment cut 2 inches longer than the pan on each short end — those overhangs are your handles — and grease the parchment.
2. Everything for the sponge into one big bowl. Beat with a hand mixer on high for 2 minutes until smooth and slightly lightened, then STOP — more beating makes it chewy.
3. Spread into the pan, corners included. Bake 10–13 minutes, until the top springs back when touched in the center. Do not overbake — a dry sponge is a cracked sponge.
4. The no-towel roll: knife along the long edges, lift the whole cake out by the parchment handles onto a wire rack, dust the top generously with powdered Swerve, and roll the cake and its parchment up together from a short end. No flipping. The paper it baked on rolls inside as the separator.
5. Cool completely rolled up, seam down, on the rack — about 1 hour. The sponge memorizes the shape; that’s why it won’t crack at the unroll.
6. Beat the cream cheese smooth, then beat in the yogurt, whey, powdered Swerve, vanilla, and salt. Refrigerate until the cake is cool.
7. Unroll gently (it keeps a little curl — let it), spread the filling edge to edge leaving a 1-inch bare strip at the far end, and re-roll off the parchment. Seam down, wrap, fridge at least 2 hours.
8. SLICING TIP: 30–40 minutes in the freezer first, then a hot dry knife wiped between cuts — the spiral comes out clean every time. Dust with powdered Swerve, trim the ends for the pretty spiral, serve cold.

  1. You're right, re Mrs. Doubtfire…I 💕 Robin Williams and miss him so much.
One the best comedic scenes in movie history, is when he leaned out the window and his face fell off! 🤪🤣🤪🤣🤪🤪🤪

  2. Thank you Dave, not everybody in the family is on a keto or low carb diet as me but they always love the keto recipes that I do and we are all happy together at the table, they are going to love this pumpkin roll

  3. Dave you look fantastic!! Eyes are sparking and your all tanned and buff. 9-5 seems to be putting the pep back in your step 👍 good to see because you were looking haggard and unhappy for a while there.❤❤

  4. Hi Dave l have mixed yogurt with sugar free vanilla pudding, then mixed in the cream cheese and some sweetener. Try that it will thicken it up abit more for you. Love your videos thanks!

  5. Thank you Dave! I do not follow keto but try to increase protein and decrease sugar wherever possible and have mostly whole unprocessed foods. It is a much more sustainable lifestyle for me and is definitely lowering my “sweet enough” satisfaction threshold overall. Dessert is a special treat for me and this is perfect. To help with the consistency of the filling you could try replacing half the amount of Greek yogurt with well drained cottage cheese, and the filling with an immersion blender to make it smooth. Then chill the filling well before putting it on the cake layer. It would thicken it quite a bit and still have a very similar taste.
